We’ve spoken several times about the versatility of our wood burning stoves… It’s so hard not to brag! Not only do they add a little traditional charm to your shepherd’s hut, but they provide warmth and can be used to cook simple meals!

Last month, we showed you how to cook a simple yet tasty mushroom and chorizo omelette on a wood burning stove.

This month, we’re trying out a wonderful halloumi and mango salad recipe courtesy of The Plain Kitchen. Many thanks to Justine for allowing us to share!

Justine’s delicious recipe pairs marinated halloumi — which can be cooked to perfection on your wood burning stove — with a refreshing combination of mango, avocado and cucumber to make a light summer dish. It’s perfect for garden parties or quiet, romantic evenings on the veranda of your shepherd’s hut!

Ingredients:

For the marinade:

  • One block of Halloumi
  • 1 clove of garlic
  • Parsley
  • Olive oil
  • Juice and zest of half a lemon

For the salad:

  • One avocado
  • One mango
  • Half a cucumber
  • Lemon juice
